Sesame Egg Salad and Whole Wheat Toast

Don’t underestimate the flavors of this humble meal. Protein-rich and high in fiber, the sesame oil adds that unexpected nutty taste and aroma.

Ingredients

2 hard-boiled eggs

1-2 tbsps. of sesame oil (or more as needed)

1 tbsp. of chopped parsley

Pinch of salt and pepper

1-2 slices of whole wheat bread

 

Directions

Boil 2 eggs for 9-12 minutes for medium eggs and 15mins for large. Meanwhile, dry toast your slices of bread for a couple of minutes on each side until desired crispiness. Optional: add 1-2 tbsps. of olive oil before putting your bread in the pan to get that golden brown color. Let it cool before putting it in your baonan to retain crispiness.

Take out eggshells, mash with fork and drizzle with sesame oil. Add salt, pepper and chopped parsley for garnish.

 

Pita Bread with Hummus Dip + Tomato & Cucumber Salad

The star of this baon is hummus, a dip that’s high in flavor and protein but low in cholesterol. Made with chickpeas, olive oil, lemon juice and salt, it may also help reduce cancer risk thanks to those chickpeas.

Ingredients

1 can of chickpeas or garbanzos

Olive oil

Lemon juice

Pinch of salt and pepper

1 pita bread

2 tomatoes, chopped or diced

½ a cucumber, chopped or diced

1-2 tbsps. of parsley

 

Directions

Combine chickpeas/garbanzos, a drizzle of olive oil, lemon juice, and a pinch of salt and pepper in blender and blend for a minute or until smooth. Let it sit and heat pita bread in pan until warm and soft. In a separate container, combine chopped or diced cucumber and tomatoes, drizzle with olive oil, and add salt and pepper for flavor. Top it off with chopped parsley—even on the hummus if desired.

 

Tuna Nicoise Salad

You can’t go wrong with a classic.

Ingredients

1 can of tuna

1 bag of mixed greens

Baby potatoes

Green beans, trimmed

Tomatoes

Black olives

2 hard-boiled eggs, chopped

Pinch of salt and pepper

 

For nicoise dressing:

1/3 cup olive oil

1/3 cup red wine or apple cider vinegar

1 tbsp. dijon mustard

 

Directions

Boil the eggs and potatoes (both takes about the same time to cook!), and make your dressing. Whisk oil, vinegar and mustard in a bowl; season with salt and pepper.  Set aside and add beans to the pan. Cook for 2-3 minutes and refresh in cold water. Drain and assemble your salad. Add the mixed greens, tomatoes, and black olives, and pour nicoise dressing. Toss lightly and season with salt and pepper as needed.
